Gute Idee!
Tasächlich gibt es eine solche Einstellung:

hdmi_ignore_hotplug=1
Setting this to 1 pretends that the HDMI hotplug signal is not asserted, so it appears
that a HDMI display is not attached. In other words, composite output mode will be used,
even if an HDMI monitor is detected.
Scheint auch zu funzen ... Zumindest kommt im Moment das Bild verlässlich über Klinke.
Es bleibt noch das Problem, HDMI Audio zu bekommen. Keine Ahnung, ob das jetztt noch ausgegeben wird oder nicht, muss das noch testen. Im Moment jedenfalls ist mein Audio Eingang am Hifi-Receiver tot :-)
